What role does the Consorzio play in relation to the member companies?

The fundamental mission of the Consorzio italiano tutela Mortadella Bologna is to pursue the protection, promotion, enhancement, consumer information, and overall care of the interests related to the Protected Geographical Indication (IGP) Mortadella Bologna, in compliance with market regulations.

In carrying out its activities, the Consorzio is committed to implementing measures to prevent and avoid phenomena that could directly or indirectly damage the product, the consortium, or the members. It does so primarily through the enforcement of the rules established by the Production Specifications, while ensuring that each producer can preserve their original recipe and continuously improve.

This constant activity has the main objective of guaranteeing consumers a product with unique characteristics in terms of quality and taste.

Why choose IGP

Mortadella Bologna is an IGP product, which stands for Protected Geographical Indication. This designation recognizes the value of a particular food specialty produced in a specific geographical area and immediately distinguishable for its organoleptic characteristics.

To obtain this recognition, at least one phase of production, transformation, or processing must take place in a delimited area; furthermore, a Production Specification must exist to regulate every step of the process.

This recognition, a guarantee of control and quality, was granted by the European Union to Mortadella Bologna in 1998.

THE PROTAGONISTS

Companies

Currently, the Consorzio has 33 members, including producers and slicers of Mortadella Bologna IGP. All are required to comply with the Production Specifications approved by the European Union, which protect both the ingredients and the production process.

The Specifications precisely outline not only the traditional preparation recipe but also the organoleptic, chemical, and physical characteristics of the finished product.

Code of Ethics

The Code of Ethics, adopted by the Consorzio in 2020, is a set of principles and rules whose observance by directors, members of governing bodies, consortium members, employees, and collaborators is of fundamental importance for the proper functioning, reliability, and reputation of the Consorzio.

The Code of Ethics was prepared to indicate the guiding principles for the behavior of all recipients, in order to clearly and transparently define the values that inspire the Consorzio in carrying out its activities.
